Soup de Jour

Yesterday's Soup of the Day was (homemade) Vegetable

Although I didn't take the recipe out of Mirielle's book it was quite similar and only differed as to what I had on hand. My recipe was a bit more on the stew side than the soup side... however it was still really good!

Vegetable Soup:
1 yellow onion, diced
3 stalks celery, diced
4 potatoes, cubed
1/2 cabbage
5 carrots, diced
1 clove garlic, diced/smashed
1 tbsp. dill
fresh ground pepper
sprinkle salt
4 cups water

Bring water to a boil in a large stock pot. Add the potatoes, onion and garlic. Cook until potatoes soften.
Add the remaining vegetables and cook until tender - about 15 minutes.
Add seasonings and allow to simmer on low heat for another 5 to 10 minutes.
Serve.

It was simple and quick and really good! You can use any type of vegetables you like in this, the dill gave it a wonderful flavor and smell (it's one of my favorite herbs to use!)

I have another recipe that I simply LOVE, it is my all time favorite soup to make (but definitely a winter meal)

Beef & Vegetable Soup

Stewing beef
2 cups beef broth
2 cups water (or more depending if you like lots of broth)
1 can garbonzo beans (chick peas)
4 stalks celery
5 carrots, diced
2 cloves garlic, diced
1 yellow onion, diced
1 sm.bag baby potatoes, cubed
1 lg.can stewed tomatoes
1 bay leaf
Salt & pepper
paprika
Hot sauce
Extra virgin olive oil

In a large stock pot add E.V.O.O. and stewing meat, brown meat and allow to cook through (stirring so as not to burn)
Add potatoes, onion, garlic and canned tomatoes. Cook until potatoes soften.
Add remaining vegetables, bay leaf, salt & pepper, paprika, hot sauce, broth and water. Once bubbling lower heat and allow to simmer for 10 minutes, until vegetables are tender.
Remove bay leaf.
Serve with sourdough bread!

This is another soup that you can substitute the vegetables for what you have on hand or whatever you prefer. It's an amazing meal for cold snowy nights in and makes enough for leftovers!
(I am REALLY going to miss having beef in this dish...) If you have one, try making it in a slow cooker as it will drastically change the meat to a very savoury and soft texture.

Soup is my all time favorite thing to make and it's really easy and when you make it yourself it's so healthy for you! There are SO many endless options of types and flavors too, sure to please any palate!
As long as you use appropriate seasonings it will turn what may sound bland into flavorful goodness! :)
